Cooking With Nya: Roast Chicken
Recipe by Nya Offutt.
I have been cooking for my family since I was around three years old. This chicken dish is one of their favorites, so I make it often. Make this for your family. They will love it. Let me know how it turns out.
1 tablespoon seasoning oil
1 tablespoon butter
1 teaspoon Montreal seasoning
1 teaspoon Cajun seasoning
1 whole roasting chicken
Black pepper to taste
Enough water to cover bottom of pan
Step 1: Clean chicken. Wash and remove all fat.
Step 2: Coat chicken with butter.
Step 3: Mix together seasoning oil, Montreal seasoning, Cajun seasoning and black pepper.
Step 4: Put aluminum foil in the roasting pan. Place chicken in the pan. Rub the oil and seasoning mix over the whole chicken. Let it sit overnight in the fridge.
When you are ready to cook, add a little water to cover the bottom of the pan. Bake at 300 degrees for one hour or until tender. Let cool. Then serve and enjoy.
